The Berthillon house, it is one of the oldest glaciers in Paris, but also one of the oldest partners of the Hubert Cloix house. Its story began in 1954. Raymond Berthillon, who then ran a café-hotel on Île Saint Louis with his wife and his mother-in-law, decided to commission the turbine he had acquired a short time before and to offer ice creams and sorbets.

The fame of the small glacier quickly crossed the borders of Île Saint Louis. It's a real family saga that has been going on ever since… Raymond Berthillon had understood the key to success before long: qualitative ingredients, robust and made in France equipment and a family continuity which is very popular.

If there are more than 70 perfumes, it is the timeless vanilla that remains the flagship product of the Berthillon house. Its founder also liked to say that it was to this perfume that one could compare glaciers! For the more adventurous in search of more exotic flavors, frozen chestnut in winter and wild strawberry in summer remain great classics of the establishment.

Berthillon - Cloix: a lasting partnership

But how are these ice creams turbined?
Lionel Chauvin tells me that after being contacted by a famous Italian brand, he told them that despite their commercial success, their machines could never make ice cream as good as Cloix turbines ! Okay, we obviously agree, but we'll explain why… It's simple: everything depends on a ratio between the width of the tank and the surface which is in contact with the cold.

These machines are the pillars of Berthillon production. They run in manual mode 4-5 hours a day, in order to be able to control the appearance of the ice creams: color, texture, etc.

But apart from the technical characteristics of the Hubert Cloix machines, what makes the relationship between the two houses sustainable is their family side. If Hubert Cloix and Raymond Berthillon worked together with great pleasure, it is still the same today between the two grandsons of these gentlemen: Maximilien Cloix and Lionel Chauvin.

This relationship of trust, they keep it going and the Hubert Cloix company is always attentive to the needs of the Berthillon house in order to adapt to their production.
