Boule de glace is a small shop nestled in a building in Montreuil, opposite the Croix de Chavaux metro station. Apparently, unpretentious, but appearances are sometimes deceiving. It is François Martinez who is behind this concept of “ready-made ice cream scoops”. Gone are the days of the ice tray from which the product is scooped out to form the precious ball. Here, the balls are already made, presented in salad bowls. You can even choose a formula and buy them by 6 or by 12. Perfect for the undecided.

If the store has only been around for four years, the story really begins in the 1935s. In the Martinez family, we are ice-cream makers from father to son. It is therefore quite natural that François, after his grandfather, then his father, in turn follows a pastry-ice cream maker training.

Products worked

And the products are up to the task. Classic or original ice creams, the traditional vanilla and chocolate are excellent, but do not overshadow the most disconcerting matcha, candied ginger or plumber.
Served in wafers, these ice cream sandwiches delight children, but also more mature palates.
If you are greedy, do not hesitate to decorate them with sweets: pralines, meringues, black sesame crunch… Everything is homemade!

Machine side ... A pastocooker et an ice cream maker are François Martinez's allies for this “feeling” production. If the machines generally run 4-5 hours a day, it depends on the time of year. In summer, the shop is open longer, to the delight of customers who praise it on Google Reviews. Speaking of praise, it is our pastocuiseur who must have blushed: “it heats and cools really well, I am delighted”, François Martinez tells us.
